Blanquette de Limoux 'Saint-Hilaire'
The Limoux region lies right in the south-west of France and is arguably the true, original cradle of French sparkling wine; long before they mastered their production in the more famous Champagne region. A certain Benedictine monk by the name of Dom Pierre Pérignon honed his skills as cellar master at Abbaye de Saint-Hilaire prior to re-locating to the Abbaye d'Hautvillers in Champagne.
The production method is the same as that of Champagne, with the all important second fermentation taking place in the bottle and the wine then resting on the lees for a minimum 12-months resulting in a lively, persistent fizz. The chardonnay, chenin blanc and mauzac grapes can ripen perfectly in this southerly region resulting in a slightly more fruit forward style, with more balanced acidity baking up the orchard fruit character.
Upon pouring there's a lovely persistent fizz dancing at the top of the glass releasing aromas of ripe orchard fruit and citrus.
The palate is fresh and crisp, ripe apple and pear dominate with citrus and delicate stone-fruit in the background with delicate biscuity, yeasty notes on the finish reminiscent of must more prestigious and expensive sparklers.
The orchard fruit hangs nicely on the finish and that persistent fizz grips the palate beckons you back for another sip.

More fruit-forward and softer than its more northerly cousin in Champagne, with orchard fruit, pear and white peach on the palate, a crisp, dry finish and a persistent fizz. Where possible, we will use the existing packaging the wine is shipped to us in from the producer. If we feel this is unfit, we will re-pack in a Mr.Wheeler branded, recyclable cardboard carton.
