Special Cuvée Bollinger, Champagne (magnum)
The secret to the fuller-bodied style of Special Cuvée is the use of a high proportion of pinot noir and the inclusion of a number of reserve wines which have been partially matured in old French oak barrels. Further enhanced by extended ageing on the lees, 5-years in fact, which far exceeds the appellation's requirements for a non-vintage Champagne.
The result is an outstanding wine with depth of flavour and small bubbles providing a fine and persistent quality to the mousse. It is well balanced with orchard fruit, citrus and a toasty, biscuity character on the finish.
