2021 Fixin, Maison Jaffelin
A deep, vivid mid-red in the glass, this Fixin opens with lifted floral notes of violets and peony, followed by vibrant blackcurrant, Morello cherry and a touch of quince. Subtle hints of musk and pepper add further complexity. On the palate, it shows its youthful structure with firm yet ripe tannins, balanced by a rounded, generous attack. With time, the wine gains in finesse, revealing a supple texture and beautifully composed frame.
From vineyards in the Côte de Nuits, between Dijon and Gevrey-Chambertin, Fixin (pronounced Fissin) has long been admired for producing hearty, characterful reds—traditionally known as "winter’s wines". An excellent partner for red meats, poultry in sauce, and a wide range of cheeses.

If your patient, I imagine this wine like others from Burgundy would taste even more out of this world than it does right now! For the price, I would highly recommend this, the star at any dinner party I enjoyed this mid week because why not?
