Indeed, Jean Pabiot's 2023 is a superb testament to this pedigree, by which meticulous grape selection, lower-yielding vines, and generations of winemaking expertise converge for a wine showcasing both varietal purity and world-class terroir.
Good citrus bouquet with hint of apple. First taste shows high acidity and lemon with some apple. Aeration for 30 minutes tempers the acidity and enhances apple with soft peach that carries through to a long finish. Although I am disappointed that gunsmoke/flint is not present there is some minerality.
A crisp elegant sauvignon blanc very well made wine lovely, perfect for outdoor drinking. Efficient speedy delivery as well.
