2019 'Swartskaap' Cabernet Franc, Hermanuspietersfontein, Sondagskloof
'Swartskaap' in English translates to 'black sheep'. This wine, like a black sheep, stands out amongst the rest. The winemaking is meticulous. It is aged in old (50%) and new (50%) French oak 225L barrique (50%) and 500L pigeons (50%) for a 24 month period. It then undergoes a further 24 months of cellaring before release. Upon opening prepare to experience both intense red and black fruit - raspberries and blackcurrants along with black olives, graphite, Italian herbs and even milk chocolate. Drinking well now, but sure to improve with age.
